Xanthan Simple Syrup


  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 0.5 gram (1/8 teaspoon) xanthan gum


  1. Bring the sugar and water to a rolling boil in a medium saucepan. Transfer the syrup to a blender after it has cooled completely. Add the xanthan to the blender and blend for 15 seconds. Transfer the syrup into a jar and cover. Refrigerate until it is clear. This can take up to 4 hours.
